Blend together the Peri peri sauce ingredients, using the water to thin the sauce if needed.
Marinate the leg quarters in the fridge overnight or for at least a morning.
Bake the leg quarters in the oven and in the marinade for 40-50 minutes or until cooked through and golden all over.
Reserve the sauce for serving.
While the chicken is cooking, make the waffle batter by whisking together the soda water, egg and melted butter.
Stir into the pancake mix and keep stirring until all the lumps are removed.
Preheat the waffle maker and grease with spray and cook.
Once heated, prepare the waffles.
Heat the cream style sweetcorn in a pan until warm.
To serve, plate a waffle then top it with a spoonful of cream style sweetcorn, add a leg quarter, pour over some peri peri sauce and garnish with spring onions and chopped chillies and a lemon wedge.
